The 2024 harvest of our High Phenolic Olive Oil showcases the power of nature and sustainable farming practices. This year, Cyprus faced significant environmental challenges, including a particularly dry winter followed by an intense spring heatwave. Temperatures reached unprecedented highs of 40°C as early as mid-April, presenting unique obstacles for olive cultivation. Despite these trying conditions, our olive groves demonstrated remarkable adaptability. The timing of the heatwave, occurring after the critical flowering period, allowed our olives to form and develop, safeguarding our anticipated yield. This resilience is a direct result of our commitment to regenerative agricultural techniques, which have proven invaluable in creating robust, drought-resistant ecosystems. Our sustainable practices have not only helped our trees weather the climatic extremes but have also contributed to the production of an olive oil with exceptional qualities. This year's High Phenolic Olive Oil boasts an impressive concentration of beneficial compounds, reflecting the strength and adaptability of our groves. Herbal: Hints of herbaceous notes like wild herbs, thyme, and rosemary. Peppery: A characteristic feature of our High Phenolic Extra Virgin is a peppery sensation on the nose. This "pungency" has a pronounced, almost burning, pepperiness. Taste: Bitter: pronounced bitterness on the tongue. This bitterness is pleasant and desirable, signifying the presence of health-promoting polyphenols. Spicy: The peppery sensation detected in the aroma will translate to a pleasant "spicy" or "peppery" flavor at the back of the throat. This "pungency" complements the bitterness and creates a well-rounded taste profile.
